Loved this conversation so much. And so many fantastic Austrian wine pairing tips. @tara: Could that dish you mentioned have been Lungenstrudel? My curiousity got the better of me, and I did some digging after we finished. Thank you, Tara!

Paula, it wasn’t Lungenstudel – there was no nice pastry to balance the offal funk. I think it must have been a variation on Beuschel – this one less like a stew and more like a steamed pudding (again, that soft texture we were talking about!). That said, if Monika were to make Beuschel, I’d be completely ready to try it (perhaps with an aged Weissburgunder or Grüner Veltliner!), though I’d rather have Grammelknödeln any day!
